Abstract
Syntetic of coconut oil in home industries scale generally contain some compound that make the quality of coconut oil is not good. To increase quality of coconut oil is needed process to reduce free fatty acid and its impurity so that well preserved and appropiate consumer quality standard. Some method can be used to it, ones is adsorption process. Ones of the nature adsorber that can be used in this process is morinda citrifolia. Its contain ascorbic acid that use for avoid oxidation reaction in coconut oil. So morinda citrifolia is hoped can be reduce fatty acid value in rarefaction process of coconut oil. The goal of this research was obtain information about influence part of morinda citrifolia, stired time and volume of morinda citrifolia juicy toward fatty acid value and percent transmittan in rarefaction process of coconut oil. The result of this research showed that bread of morinda citrifolia can be more reduce fatty acid value than its seed. The stired time and morinda juicy volume those gives the highest percent of declaration of fatty acid value (33.91%) and percent of transmition (87.1%) are 30 minutes and 30 cc. This prove that morinda citrifolia can be use as adsorber in rarefaction process of coconut oil although percent of declaration of fatty acid value is not so significally.
